Citrus Garlic Fish En Papillote

So I know this is a hard name to pronounce but it is an easy dish to make that will soon become one of your favorites I promise.
Here is what you will need.

4 5-7 ounce portions of your favorite fish.(we used Mahi Mahi,Salmon,Ahi and Tilapia)
1 Carrot peeled and sliced in strips
1 Red bell pepper sliced in strips
1 Red onion sliced
Parchment paper
1 pair of scissors
3 stocks of celery sliced
Real Lime juice
Real Lemon juice
Olive Oil
Minced Garlic
Salt and Pepper
White Wine (optional)
2 cookie sheets

Steps
1 Preheat oven to 350 degrees
2 While the oven is heating peel and slice carrots,slice onion,peppers and celery
3 Take four pieces of Parchment paper and fold them and then one by one cut them into heart shaped pieces.
4 Place a small amount of oil on one side of the heart shaped paper. Evenly spread it out.
5 Place celery,carrots,peppers and finally onions on top of oil.
6 Now place a fish fillet on top of the veggie medley.
7 Squirt lemon and lime juice on the fish and spread a small amount of garlic on the juice mixture (can also add white wine with the lemon and lime juice if desired)
8 Fold paper over and crease the heart paper together.
9 Place on cookie sheet and put in oven.
10 Cook for 11 minutes or until fish is flaky.
11 Take out of oven and remove from parchment paper and serve immediately. Can use the veggie medley as a side dish as well.
12 Salt and Pepper to taste and ENJOY!!

Chicken,Basil and Tomato Stuffed Portabella Caps

So here it is the long awaited healthy food on my blog.
Here is what you are going to need

2 tablespoons of chopped Basil
2 Diced Roma Tomatoes
1 Diced Medium Avocado
1 Pound of chicken cooked and diced
3 Portabello Mushrooms
1 Tablespoon of Olive Oil
1 Teaspoon of Garlic (chopped,diced,or fresh diced are all good to use)
1 oz of Mozzarella Cheese (optional mostly for those not training to run a Marathon)
1 Saute pan
1 Stirring spoon

Steps
1. Preheat oven to 350 degrees.
2. While oven is heating up cook chicken in saute pan on medium heat.
3. While chicken is cooking take stems off of the mushrooms and dice them up. Also hollow the inside of the Portabella cap out.
4. Cook Mushroom caps in oven for 5 minutes then turn over and cook for 5 more minutes. Then Take out and let stand for 3 minutes.
5. During that time dice Basil,Chicken,Tomatoes and Avocado.
6. Place Basil,Chicken,Tomatoes,Olive Oil, Garlic Salt and pepper in Saute pan and saute on medium for 3 minutes.
7. Stuff Portabella caps with mixture from the saute pan.
8 Place Avocado on top of chicken mixture.
9 Place Cheese if desired over the stuffed Portabella.
10. Return Mushrooms to the oven for 5 minutes. Remove and let stand for a minute
11. Of course the best part ENJOY!!!!

Parmesan Pull-Aparts

So here is quick and easy recipe for a snack,they also go well with soup.
Here is all you are going to need.
This reipe was made by Mitch!!

3 Tablespoons of butter
1/4 teaspoon of celery salt
1 teaspoon mined dry onion
1/4 teaspoon dill weed
1 teaspoon garlic and herb seasoning (Mrs. Dash is good also)
1 package of Refrigerated Biscuits
1 Tablespoon of Parmesan Cheese
1  8 inch round Baking dish

1. Preheat oven to 400 degrees
2. Melt butter and pour into bottom of the baking dish.
3. Sprinkle spices evenly in melted butter
4. Evenly place biscuits on top of butter mixture
5. Sprinkle Pamesan cheese on top of biscuits
6 Place in oven and cook for 12 minutes.
7. Take out of oven let stand for 3 minutes then flip upside down on a serving dish and enjoy!!

Broccoli and Cheese Soup

OK my friends here is the much wanted recipe of one more on my famous soups.
What you are going to need

24 oz of Chopped Broccoli
1/4 cup of Butter
4 cups of Water
1 pint Heavy Cream
2 cubes of chicken Bullion
1/2 teaspoon of black pepper
8 oz of shredded Cheddar cheese
1 soup pot
Slurry (1/4 cup of cold water and 1 tablespoon of corn starch)

Combine water,broccoli,chicken bullion,pepper and butter in soup pot. Cook on medium until broccoli is tender. Boil for 3 minutes more. Add slurry and cheese. Remove from heat and pour in heavy cream. Stir for about 1 minute let stand for 2 more minutes and serve. Enjoy!!

Awesome Fish Tacos

You are going to need the following
 So these are easy and are so mouthwatering good when they are done.

2 tomatoes diced
1 Jalapeno diced
1 Red onion diced
1 cup purple cabbage cut thinly
1/4 cup cilantro finely diced
1 tablespoon of creole sauce
1 piece of Tilapia grilled and cut into chunks ( salmon or halibut can be used )
10 corn tortillas
1 avocado
1 sauté pan
6 ounces of chipotle mayo
3 teaspoons of olive oil
1 small mixing bowl
1 whisk
1/2 cup of salsa
1/2 cup of guacamole
1/4 a cup of shredded cheese


Step 1 Grill fish in sauté pan on medium heat sprinkle creole sauce and 1/2 teaspoon of olive oil. While the fish cooks dice up Tomatoes, onion, cabbage, Jalapenos and cilantro.
Step 2 Turn off the heat and move fish off the burner. Wisk together olive oil and mayo in the mixing bowl which creates an aioli.
Step 3 Warm the tortillas in the microwave for 15 seconds.
Step 4 Assemble the tacos as follow tortilla, aioli, cabbage, fish, tomato, onion, drizzle a little more aioli and sprinkle cilantro on top. Then top your taco with any of the following jalapenos, avocado, cheese, salsa or guacamole.

Jambalaya

Here is some easy Cajun for all of you to try.
You will need the following

2 boxes of zatarain's jambalaya mix
1 cube of butter
1 bottle of bloody mary Tabasco mix
1/4 tsp of garlic
1 tablespoon of Creole seasoning
3/4 pound of shrimp
1 package of adouille sausage
1 pound of chicken tenders
1 soup stock pot
1 fry pan

Combine butter, jambalaya packet, bloody mary mix in stock pot on medium heat. While that is coming to a boil dice chicken and sausage fry up shrimp,chicken and sausage individually. Add them to the mixture in the stock pot when they cooked off. Bring to a boil and cook for 10 minutes continue to stir frequently. let stand for 5 minutes and serve. Enjoy can add more creole seasoning to it if you like it spicier.
