Surf and Turf Kabobs

   Holy cow sorry it has been so long for a recipe but this is an awesome recipe well worth the wait.
Here is what you are going to need.

1 pound of steak cubed into 1/4 inch pieces
10 large Scallops cut in half
12 Large uncooked shrimp deviened and shelled
Olive Oil
Old Bay seasoning
Montreal Steak Seasoning
10 Skewers
3 Ziploc bags
2 Cedar Planks

Steps
1. Season Shrimp with Old bay seasoning and place in Ziploc and drizzle 1 teaspoon of olive oil in bag. Shake up and place in fridge for 1 hour.
2. Season Scallops with Old Bay Seasoning and repeat the same step that you did with shrimp.
3. Season the Steak with Montreal Steak seasoning place in bag Shake well and place in fridge for 1 hour
4. Soak Cedar planks in water for 1 hour.
5. Take out the bags of meat and place on skewer shrimp,meat,scallop,meat and repeat till skewer is full.
6. Turn on your BBQ on medium heat.
7. Place Cedar Planks on grill for 5 minutes then flip over.
8. Place skewers on the planks. Close lid and cook for 5 minutes or until the steak is to desired doneness.

Honey Drizzled Tilapia

                          
  Sorry I was gone for so long. We were on vacation in Washington state out on the peninsula. In the spirit our fresh seafood. Here is what you will need.

1 1/2 cups of honey
2 apples sliced
5 sheets of tin foil
5 5oz portions of Tilapia
2 1/2 oz of creole seasoning


Steps
1 Preheat oven to 400 degrees
2 Place sliced apples on tin foil sheets
3 Put Tilapia on apple slices
4 Drizzle honey equaly over all fish portions
5 Sprinkle with seasoning
6 Fold tin foil and place in oven for 15 minutes.

Salmon Salad with Blackberries and Mozzarella cheese

Sorry it was a hectic few weeks. So I figured I would start again with something healthy.
Here is what you are going to need.

3 Tablespoons of olive oil
2 Tablespoons of Balsamic Vinegar
1/4 cup of fresh Blackberries
1/4 cup of Diced Mozzarella cheese
1 head of Romain lettuce chopped
8 ounces of Grilled Salmon
2 Tablespoons of Salsa
1 Avocado sliced
salt and pepper to taste

Steps
1 Mix olive oil and Balsamic vinegar together.
2 Place lettuce,cheese, blackberries,salsa,Salmon and avocado.
3 Drizzle vinaigrette on top of salad.
4 Salt and Pepper to taste

Cranberry Pecan Chocolate Chip Cookies

Here is a new cookie recipe i made it is a little different but i think you will love it.
what you are going to need is....

2 cups Flour
1 teaspoon Baking Soda
1 teaspoon of Cream of Tarter
1 teaspoon Kosher Salt
1 cup butter softened
1 1/2 cup Sugar
1 Egg
1 Egg Yolk
1 teaspoon of Vanilla
1 cup Pecans Chopped
1 cup Chocolate Chips
1 cup Cranberries
1 cookie sheet
1 metal whisk


Steps
1 Preheat oven to 350 degrees.
1 Sift Flour,Cream of tater,Baking soda and Salt together in a bowl.
2 In another bowl mix butter,sugar,vanilla,egg and egg yolk together with whisk for 1 minute.
3 Fold in flour mixture to butter mixture.
4 Add cranberries,Pecans and Chocolate chips  into dough.
5 Roll dough into balls and place on cookie sheet.
5a Or you can place in parchment paper and roll dough up and put in refrigerator for 2 hours then slice it and place on cookie sheet and bake it.
6 Bake for 11 minutes let cool for 2 minutes

Shrimp Scampi with a twist

So I have been on a pasta kick and here is a new one.
What you will need is.

1 box of angel hair pasta
2 Roma tomatoes diced
1 teaspoon of minced garlic
1 shallot diced
1 bunch of green onions diced
2 Tablespoons of olive oil
2 cups of raw shrimp
Salt and Pepper
Franks hot sauce(optional)
1 saute pan


Steps
1 Saute shrimp,shallots,garlic and green onions in olive oil on medium heat for 7 minutes.
2 Add tomatoes, salt, pepper and franks hot sauce if desired.
3 Place mixture over cooked angel hair pasta.

Pasta Rosa

So here is a quick and easy pasta dish!!
Here is what you are going to need!!

1 Bell Pepper diced
2 Roma tomatoes diced
1 Red Onion diced
1 cup olives sliced
1 cup fresh mushrooms sliced
1 tablespoon of diced garlic
6 ounces of diced chicken cooked
4 cups marinara sauce (can use my recipe from the lasagna post)
1 Saute' pan
2 ounces of olive oil
6 cups of cooked penne pasta

Steps
1 Saute onion, pepper, olives, mushrooms, chicken, tomatoes, garlic and olive oil in pan for 5 minutes.
2 Add sauce to mixture and bring to a boil. Turn off heat.
3 Place cooked pasta in a bowl top with sauce .
4 You can choose to top it with Parmesan cheese.
5 Serve with Parmesan pull-aparts(an earlier post)

Steak and Potato Stacks with Chasseur Sauce

So here is me bringing steak and Potatoes into the 2011.
Let me know what you think!!
What you will need.

5 Potatoes sliced 1/8 inch thick
1 1/2 pound of Steak sliced 1/8 inch thick.
Non stick spray
2 cookies sheets
2 Tablespoons of olive oil
Montreal Steak Seasoning
1 Glass baking pan

Steps
1 Preheat oven to 350 degrees
2 Place sliced potatoes on cookie sheet and place in oven for 13 minutes
3 Spray pan with non stick spray
4 Layer cooked potato slices in pan
5 Layer potatoes with steak sprinkle with Montreal steak seasoning and repeat twice.
6 Place toothpicks down the center of the stacks
7 Place in oven for 13 more minutes (cook for 5 more minutes if you want the steak medium well)

                                                                 
Chasseur Sauce

1/4 cup Butter
2 Tablespoons of minced Garlic
2 Tablespoons of  minced Shallots
8 ounces of Sliced Mushrooms
1 can of diced Tomatoes
1 cup of Red Wine
2 cups of Water
2 Beef Bullion cubes
1 Saute' Pan
2 Tablespoons of slurry (cornstarch and cold water)
Salt and Pepper

Steps
1 Saute shallots,garlic,mushrooms in the butter on medium for 5 minutes.
2 Remove mixture place in bowl.
3 Pour wine in saute' pan to deglaze the pan cooking on medium for 3 minutes or until it comes to a boil.
4 Add in water and bullion and bring back to a boil.
5 Put mixture from the bowl back in saute' pan.
6 When it returns to a boil add in slurry.
7 Salt and Pepper to taste.

                                                                            
8 Place stack on plate remove toothpick and cover stack with Chasseur Sauce.

Awesome Lasagna

So here is a great treat for you Lasagna Lovers!!
Here is what you are going to need !!

Homemade Sauce
36 ounces of tomato sauce
24 ounces of tomatoes paste
1 bottle of Tabasco Bloody Mary mix
3 Tablespoons of fresh Basil chopped
3 Tablespoons of fresh Thyme chopped
3 Tablespoons of fresh Oregano chopped
3 Tablespoons of minced Garlic chopped

2 pounds of  Hamburger
1 pound of  Italian sausage
2 packages of Delallo Lasagna noodles
1 pound of mozzarella cheese shredded
30 ounces of Ricotta cheese
2 Tablespoons of chopped Italian Parsley
non stick spray
1 Large glass baking dish


Steps
1 Combine all ingredients for the sauce in a large sauce pot and bring to a light boil on medium heat.continue to stir often
2 Brown of burger and sausage together in saute pan. Preheat oven to 350 degrees.
3 Spray non stick spray in glass baking dish
4 Place a layer of Lasagna noodles
5 Top noodles with Ricotta cheese
6 Spread meat mixture evenly over layer of cheese
7 Equally spread sauce over meat
8 Sprinkle Mozzarella cheese over sauce
9 Repeat steps 1 through 8 two more times
10 Cover with tin foil
11 Place in oven cook for 40 minutes then remove tin foil and cook for 20 more minutes and remove from oven.
12 Let stand for 5 minutes and then top with Italian parsley and serve
13 ENJOY!!
